Tarte flambée traditionally comes from Alsace, and this recipe comes directly from our foodspring kitchen. Our Baking Protein helps to put a healthy spin on a hearty classic. And above all, it’s easy to make. Give it a try!
Preparation:
You can also share this tarte flambée, in which case you can cut the nutritional values in half.
- Preheat the oven to 250 degrees Celsius.
- Put the flour, Baking Protein, and pinch of salt in a bowl. Gently mix.
- Add the oil and water and work into dough with a dough hook or wooden spoon.
- Cover the bowl with a towel and set it aside.
- Mix together the sour cream and creme fraiche and season with salt and pepper.
- Cut the onions and chives into rings. If desired, cut the pears into thin slices.
- Thinly roll out the dough. Spread the sour cream and creme fraiche mix on the dough and top with the rest of the ingredients.
- Bake for about 15 minutes or until crisp.
- Garnish with chives and serve.

WHAT KIND OF DOUGH IS MOST SUITABLE FOR TARTE FLAMBÉE?
Instead of the quick oil dough, you can also prepare a yeast dough. Simply dissolve yeast in warm water and knead with the rest of the dry ingredients.The dough should then rest for about 45 minutes before it is worked further. It takes longer, but is more fluffy in the end.
WHAT ABOUT A VEGETARIAN tarte flambée?
You can put anything you like on a vegetarian alternative! Various vegetables such as tomatoes, mushrooms, eggplants, zucchini, leeks, arugula, and peppers taste great. Various herbs like thyme, basil, and rosemary are delicious. If you like it fruity, you can use pears or figs. Also delicious (in moderation!) are cheeses like feta, goat cheese, and gorgonzola.
