15 g | Chia seeds by foodspring |
280 ml | soy milk |
120 g | unsweetened apple sauce |
100 g | coconut sugar |
220 g | whole-grain spelt flour |
60 g | Banana Vegan Protein by foodspring |
2 tsp | baking powder |

Preparation:
- Preheat the oven to 180°C.
- Use a fork to mash the bananas in a bowl. Add the chia seeds, soy milk, applesauce, and coconut sugar. Mix well.
- Add the flour, Vegan Protein and baking powder and mix into a batter.
- Grease a loaf pan, or line it with parchment paper. Fill with the batter. If desired, slice a banana in half and press it into the top as decoration.
- Bake the banana bread for 60 minutes. For the best results, cover with aluminum foil or parchment paper so the top doesn't darken too much. Test for doneness by sticking a toothpick into the thickest part of the bread. If it comes out moist but clean, the banana bread is done.
- Let the banana bread cool down a bit before cutting into slices.
