Ingredients:

2 very ripe bananas
15 g Chia seeds by foodspring
280 ml soy milk
120 g unsweetened apple sauce
100 g coconut sugar
220 g whole-grain spelt flour
60 g Banana Vegan Protein by foodspring
2 tsp baking powder
optional:
1 banana as a topping

Preparation:

  1. Preheat the oven to 180°C.
  2. Use a fork to mash the bananas in a bowl. Add the chia seeds, soy milk, applesauce, and coconut sugar. Mix well.
  3. Add the flour, Vegan Protein and baking powder and mix into a batter.
  4. Grease a loaf pan, or line it with parchment paper. Fill with the batter. If desired, slice a banana in half and press it into the top as decoration. 
  5. Bake the banana bread for 60 minutes. For the best results, cover with aluminum foil or parchment paper so the top doesn't darken too much. Test for doneness by sticking a toothpick into the thickest part of the bread. If it comes out moist but clean, the banana bread is done. 
  6. Let the banana bread cool down a bit before cutting into slices.
  7. Enjoy!
