Ingredients:

50 g paprika
50 g mushrooms
50 g courgette
50 g cherry tomatoes
100 g feta cheese
1 onion
garlic
2 tbsp Organic Coconut Oil by foodspring
rosemary
oregano
marjoram

Preparing the roasted vegetables with feta cheese

  • Preheat the oven to approx. 200 degrees.
  • Cut the vegetables and the feta cheese into roughly the same size pieces. 
  • Either skewer the vegetables and feta cheese with a metal skewer or place them onto a baking tray greased with coconut oil.
  • Season with salt, pepper, rosemary and your favourite spices.
  • Roast in the oven for approx. 25 minutes. If you want your cheese a bit less melted, then just add the feta to the vegetables after 15 minutes of cooking.
  • Remove the vegetables from the oven and enjoy!

Tip:

You can use any kind of vegetable to roast. Fennel, carrots, aubergines, carrots or mushrooms – roasted vegetables are always delicious!
