Preparing the roasted vegetables with feta cheese
- Preheat the oven to approx. 200 degrees.
- Cut the vegetables and the feta cheese into roughly the same size pieces.
- Either skewer the vegetables and feta cheese with a metal skewer or place them onto a baking tray greased with coconut oil.
- Season with salt, pepper, rosemary and your favourite spices.
- Roast in the oven for approx. 25 minutes. If you want your cheese a bit less melted, then just add the feta to the vegetables after 15 minutes of cooking.
- Remove the vegetables from the oven and enjoy!

You can use any kind of vegetable to roast. Fennel, carrots, aubergines, carrots or mushrooms – roasted vegetables are always delicious!
