150 g | carrots |
250 g | apples |
4 tbsp | honey |
6 tbsp | balsamic vinegar |
4 tbsp | olive oil |
2 tbsp | mustard |
ginger (peeled, size of half a thumb) | |

Preparing the red cabbage, carrot and apple salad

Cut the red cabbage into two halves, remove the stalk and cut it into thin strips or rasp it.

Grate the carrots and apples too.

Cut the ginger into fine pieces.

Heat the ginger, honey, oil, vinegar and mustard in a pot on a medium heat and let it simmer for a few minutes.

Then put all the ingredients into a large bowl and pour the dressing over them, add salt and pepper to taste and leave in the fridge for approx. one hour.
Before you serve, garnish the salad with roasted sesame seeds and chopped walnuts. Enjoy!

Tip:
Blanche your red cabbage for approx. 3 minutes in boiling water with 1 tbsp vinegar, as this makes the red cabbage easier to digest.
